MOON LETTERS : RECIPES
Bag End Seed Cake- Esgaroth

3/4 cups butter
3/4 cups sugar
3 large eggs
1/3 cup brandy or buttermilk
1 1/2 tablespoon caraway seeds (I let them soak in the brandy)
1/2 teaspoon ground cardamom
1 teaspoon orange flavoring or orange zest
1 7/8 cups of flour
3/4 teaspoon baking powder

Heat oven to 350 Fahrenheit.

Blend butter and sugar until well creamed. Add eggs one at a time,
processing each. Add brandy, seeds, and spices, then blend. Gradually
add flour and baking powder to mix until well blended. Pour batter into
a greased loaf pan.

Bake for 50-70 minutes or until knife inserted in middle comes out
clean.

I have found that buttermilk is an excellent moistener, as this cake tends to run rather dry. Excellent with cream cheese or favorite jelly or jam.
